Dungeness Crab and Corn Chowder

Dungeness Crab and Corn Chowder

BC Crab Fishermen’s Association
This is one of those soups that will warm your soul and give your heart a hug. This recipe needs a touch more time, as we are going to simmer crab shell in the broth to try and extract as much of that BC Dungeness Crab flavor into this chowder! No waste when this chowda comes to town!

Ingredients

  • 6 cups Chicken stock
  • 2-3 cups Leftover crab shells
  • 2 tbsp Butter
  • 1 Red pepper – diced small
  • 2 stalks of Celery – diced small
  • 1 Carrot – peeled and diced small
  • 6-8 Mini red potatoes – diced small
  • 2 Shallots – roughly chopped
  • 2 Garlic cloves – diced finely
  • 1 tbsp Flour
  • 1 can Sweet corn
  • 3 Thyme sprigs
  • 2 cups leg and larger BC Dungeness crab meat
  • 1 cup ½ and ½ cream – 10% warmed up
  • Pepper to Taste
  • Top with Finely Diced Chives

Instructions

Let’s Begin!

  • Add the chicken stock and crab shells into a deep pot. Bring to a boil, then take the temp down to a simmer and allow this to infuse for 30 minutes. Remove from the heat and strain well to remove all small bits (using a cheese cloth makes this process even more fine). Set off to the side.
  • Into a deep pot, add the butter and melt. Once the pan is hot, add the shallots and garlic and stir around in the butter. Cook for about a minute. Now, add your red peppers, celery, carrot and potatoes. Cook for another 5-7 minutes.
  • Add the flour to the pan and mix into the vegetables well. Now add your fresh thyme, the corn and your infused stock to the pot. Mix everything well. Bring up to a simmer and let it go for 15-20 minutes or until the potatoes are soft. Once the potatoes are soft, remove the thyme and now you will add your Dungeness crab to the pot and allow to simmer for a couple of minutes to warm through.
  • Remove the pot from the heat and add the warmed cream. Stir well while adding the cream. Place the pot back onto the heat and bring to a deep simmer. Add your fresh black pepper and allow to hold there for 4-5 minutes and then remove to serve!
  • Serve with a big pinch of chives and some toasted buttered Brioche!

Enjoy!
