BC Dungeness Crab and Roasted Grape Crostini
Time to up your Appetizer game with these simple yet stunning crostini! The roasted grape and Dungeness Crab work so well together, you will find yourself making this for dinner instead of as a snack. Make sure you find juicy grapes for this, as the roasting juice is perfect to drizzle over your plate. Let’s level up your hosting duties and get it started!
Ingredients
For the Roasted Grapes
- 1 cup Red Grapes – seedless
- 1 tbsp Fresh Thyme
- 1 pinch Flaky Salt
- 1 tbsp Grapeseed Oil
For the Crostini
- 1 slice Thick Brioche – Crust Removed and cut into equal rectangles
- 2 tbsp Salted Butter
- 1/2 an Avocado – Sliced thin
For the Crab
- 1/3 cup BC Dungeness Crab – Flaked and Smaller Pieces are perfect for this
- 1 tbsp Kewpie Mayonnaise
- 1 tbsp Green Onion – Finely Chopped
- Salt and Pepper
- Squeeze of Lemon Juice
Finish With
- Radish Slices
- Red Chilies
- Fresh Thyme
Instructions
- Bring either your grill or an oven up to 350F. In an oven dish or cast iron, add the Grapes, Thyme, Salt and Grapeseed Oil and give a mix. Place into the cooking style you are using and roast for 45 minutes, mixing a few times during the roast.
- While this is cooking, grab a bowl and into it will go the Crab, Mayo, Green Onion, Lemon, Salt and Pepper. Fold so you don't break up the crab chunks and mix. Set aside.
- Once the time is up and the grapes are squishy and caramelized, remove from the oven and let cool. Place a frying pan on to medium heat.
- Once the pan is hot, add the Salted Butter and melt. Add the 2 pieces of Brioche into the buttered pan and toast until golden. Flip and do the same for the other side. Once golden, remove from the pan.
- Let's build the crostini! Place the brioche on a plate, followed by the sliced Avocado on top. To that, spoon on a couple of the roasted grapes and top that with a spoonful of the crab mix. Top with Radish Slices, Fresh Chilis and Fresh Thyme.
Enjoy!
