Ingredients

  • BC-caught Dungeness crab meat legs and body
  • 1 cup (200g) sushi rice
  • 100 ml sushi vinegar Fukasaku recommended
  • 1 sheet of roasted nori seaweed half a sheet makes three battleship nigiri and two crab leg nigiri

Instructions

Preparing the Sushi Rice

  • Rinse the sushi rice according to package instructions. If required, soak it in water for at least 60 minutes for best results.
  • Cook the rice according to package directions.
  • Once cooked, mix the rice with 100ml sushi vinegar using a cutting motion to avoid crushing the grains.
  • Cover with a damp towel and let cool for 30 minutes.

Dungeness Crab Leg Nigiri (Traditional Style)

  • Take a spoonful of sushi rice and shape it into a small brick-like mound.
  • Place a shucked crab leg piece lengthwise on top of the rice.
  • Use a thin, widthwise strip of nori to wrap around the nigiri, sealing the seam underneath.
  • Let it sit for a few seconds to allow the weight of the nigiri to hold the wrap in place before moving.

Battleship Nigiri (Gunkan Maki Style)

  • Take a spoonful of sushi rice and shape it into a small brick-like mound.
  • Wrap a long, lengthwise strip of nori around the rice to create a small “battleship” shape, leaving space at the top.
  • Pro Tip: Use a single grain of rice to help seal the nori strip.
  • Fill the top with shucked Dungeness crab body meat, slightly overfilling for an appealing presentation.
