BC CRAB ROLL
Let’s make a classic roll style sandwich but instead, change it up and use some BEAUTIFUL BC Dungeness Crab for your friends and family with this one! This recipe combines all the great flavors you would expect, but with a lot of fresh herbs to keep it fresh and light! Feel free to use ALL crab meat for this (Legs and Body) but finish the top of the sandwich with the big lumps for a photo worthy finish at the table!

Ingredients
- 1 Ibs Dungeness crab meat – both leg and body meat
- 1/3 cup Mayonnaise
- 1 tbsp Fresh Lemon Juice + Lemon Slices for finishing
- Zest of a whole lemon
- 2 small Celery Stalks – Fine Diced
- 4 tbsp Chopped Chives – 2tbsp for the Crab Mix and 2 tbsp for the Topping
- 1 tbsp Fresh Chopped Dill
- 1 tbsp Fresh Chopped Curly Parsley
- Salt and Pepper – to taste
- 1/2 tsp Old Bay Seasoning
- 1 tbsp of your favourite hot sauce
- 1 Avocado – Halved and Sliced Thin
- 2 tbsp Salted Butter
- 4-6 Brioche Roll Style Bun – or any other bun you would like to use
- Kettle Cooked Potato Chips – I like either a Salt and Vinegar or something a bit spicy
Instructions
- Into a large mixing bowl, add your Lemon Zest, Celery, Fresh Herbs, Salt and Pepper, Old Bay Seasoning and Crab. Be careful and mix gently so as not to break up the lumps of beautiful crab
- To this bowl, now add the Mayo, Lemon Juice, and Hot Sauce. Again, carefully mix well. Set aside and get your buns ready!
- Heat up a pan on the cooktop to a medium heat. We are going to toast the outside of the bun to warm it and add a bit more texture! Butter the outside of the bun and place it into the pan. Toast each side of the bun until coloured and warmed through
- Next, let's assemble! Open the bun, and add a couple slices of the Avocado to one side. Next, take a couple spoons of the BC Crab Mixture and place it into the roll next to the avocado
- Finish the roll with a sprinkle of Chives and a squeeze of Lemon. Serve alongside some Kettle Chips and a Slice of Lemon!
Enjoy!
