How to Do BC Crab: Shuck It!

Shucking crab has a reputation for being messy, dramatic, and vaguely crime-scene-adjacent, which is… fair. You’re cracking an exoskeleton open with pliers that go in the dishwasher. Chaos is part of the charm.

But as Chef Johnny Bridge shows us, shucking BC Dungeness Crab is way easier than your brain wants you to believe. Once the crab is cooked and cleaned, all you’re really doing is twisting, cracking, peeling, and trying not to eat every second piece before it hits the bowl.

Follow along with the video here as Johnny keeps it simple, straightforward, and gloriously low-stress.

How to Shuck BC Dungeness Crab Step-by-Step

1. Start with the clusters.
Twist each leg and claw away from the body. They pop right off.

2. Crack, don’t crush.
Use a crab cracker, nutcracker, or the back of a spoon to gently crack the shells. You’re going for controlled pressure, not Hulk energy.

3. Peel the shell away.
Once you’ve made a clean crack, peel back the shell to reveal that pristine meat.

4. Keep pieces whole when you can.
Large chunks = great texture for dishes.

5. Sort twice.
Tiny shell fragments love sneaking in. Give your bowl of meat a second pass — your teeth will thank you.

6. Use it however you want.
Crab cakes, ravioli, maki rolls, pasta, seafood chowder, toast, tacos. The limit does not exist.

What about the shells?

We’re glad you asked because, yeah, day-after shells are eeeeeee. Smelly, stabby, and not exactly communal-apartment-organics-bin-friendly.

Lucky for you, we already wrote a whole guide on what to do with crab shells. Composting, freezing, stock-making, safe disposal, we cover it all in The Shell-ephant in the Room.
